To make it vegan, replace the cheddar and mayonnaise with vegan products.

- 2 100% plant-based smoked taste burgers
- 2 buns
- 1 small courgette
- 1 onion
- 1 bell pepper
- 2 tablespoons mayonnaise
- 2 tablespoons mustard
- 2 slices of cheddar cheese

Combine the mayonnaise and mustard in a bowl and season with pepper.

Toast the buns. In a hot, lightly oiled frying pan, sear the burgers over high heat for 45 seconds on each side. Place one slice of cheddar on top of each burger and continue cooking for 1 minute over medium heat.

Spread the sauce on the buns, place the burger patties with the cheddar cheese on the bottom bun, add the roasted vegetables and the rocket, and finish with the top bun.
