Mediterranean veggie nuggets wraps

Ingredients for 4 persons

  • 1 container of ACCRO plant-based nuggets
  • 4 tortillas
  • 50 g of feta cheese
  • 100 g of black olive tapenade
  • 20 cl of olive oil
  • 1 sprig of thyme
  • 50 g cooked chickpeas
  • 1 courgette
  • 1 bell pepper
  • 1 red onion
  • sun-dried tomatoes
  • roquette

Ready for a burst of flavour?

Step 1

Preheat the oven to 180°C, place the ACCRO plant-based nuggets in an oven safe dish and bake for 5 minutes.

Step 2

Cut the feta cheese into cubes and marinate in olive oil and thyme. Cut the bell pepper into quarters and slice the courgette into rounds.

Step 3

Preheat oven to 220° C. Arrange the vegetables on a rack, drizzle with olive oil and roast for 15 minutes.

Step 4

Cut the sun-dried tomatoes into cubes. Put the feta cheese and the marinade, the sun-dried tomatoes and the chickpeas in a frying pan and cook over low heat for 3 minutes.

Step 5

Spread the tapenade, grilled vegetables and chickpea mixture on the tortillas.

Step 6

Add the ACCRO nuggets, rocket and a few slices of red onion.

Step 7

Roll the wraps up tightly and cut them in half.

Step 8

Enjoy them as an appetizer or as a main course, hot or cold! Chef's Tip: Moisten the tortillas slightly and pop them in the microwave for a few seconds to make them easier to roll!
