- 20 g peppercorns
- 20 g butter
- 1 tablespoon Cognac
- 2 cl white wine
- 5 cl hearty vegetable stock
- 10 cl heavy thick cream

Set them aside on a plate in a warm place. Wipe the remaining oil from the pan. Add 20 g of butter, add the peppercorns and toast them for a few minutes.
Add the burgers and deglaze with the cognac. Carefully light with a match or lighter to flambé. Pour in the white wine and reduce.
Add the hearty vegetable broth and remove the burgers. Add the cream.
Simmer over low heat until the sauce thickens to a gravy consistency.
