For the chimichurri sauce
- 1 teaspoon chopped flat-leaf parsley
- 1 teaspoon chopped coriander
- 1 Tbsp chopped oregano
- 4 tbsp olive oil
- 3 small cloves minced garlic
- ¼ red onion, diced
- 2 tbsp wine vinegar
- 1 tbsp lime juice
- ½ tsp chilli flakes
- salt
- pepper

- 1 carrot
- 1 zucchini
- 1 red pepper
- 1 small fennel bulb
- 10 cherry tomatoes
- 1 red onion
- 1 clove of garlic
- 1 sprig of thyme
- 1 tbsp olive oil

Prepare the chimichurri sauce: in a bowl, pour the herbs, garlic and onion. Add olive oil, vinegar and lemon juice. Season with salt, pepper and chilli flakes. Keep refrigerated until ready to serve.

Prepare the roasted vegetables: peel then cut the vegetables into pieces. In a bowl, season them with oil, minced garlic, thyme, salt and pepper.

Put the vegetables on a baking paper on a baking plate. Bake them in the oven for 30 to 40 minutes at 180°C. Add the cherry tomatoes 10 minutes before the end of cooking.
Step 5
Arrange the patties on a plate, generously coat them with chimichurri sauce. Accompany them with roasted vegetables and enjoy!
